This one is a big hit every time and it’s SIMPLE and CHEAP! Roasted Capsicum stuffed with Cous Cous!
So basically for the uninitiated, it is capsicum, roasted and then stuffed with cous cous.
This dish makes you look like you can cook and you really can’t fail other than burning the capsicum.
The basics is, you cook the cous cous, which costs around about $1.50 for a packet. You only need 4 cups and then cook it, which takes water and 5 mins.
Then you slice the head of your capsicum suff the capsicum with the cooked cous cous, place in a roasting tray with some oil then pop in the oven for 20mins at 200 degrees.
See how simple and cheap this is?
You can add things like feta or left over vegies that are chopped up to your cous cous mixture but basically 6 stuffed capsicums will cost you about $4.
